These delightful cookies possess a tender, fluffy texture, complemented by the zesty tang of sour cream and a hint of zesty lemon peel. Should you prefer, you can skip the rolling and cutting process by sprinkling 2 1/2 to 3-inch cookie molds with flour. For each cookie, gently press a portion of the dough into the mold to form it. After that, remove the cookie. Proceed to bake according to the instructions. Enhance with colored powdered sugar icing, royal icing, or buttercream frosting, and sprinkle with festive decorations or dots of vibrant icing. Alternatively, you can simply dust the cookies with powdered sugar for a simple yet sophisticated look.

Ingredients:

– 1/2 cup salted butter, softened

– 1 cup sugar

– 1 tsp. baking powder

– 1/4 tsp. baking soda

– A pinch of salt

– 1/2 cup sour cream

– 1 egg

– 1 tsp. vanilla

– 1 tsp. lemon zest (optional)

– 2 1/2 cups all-purpose flour

Instructions:

Begin by beating the softened butter in a large bowl with a mixer on medium speed for 30 seconds. Incorporate the sugar, baking powder, baking soda, and salt. Continue beating until well blended, scraping the bowl as necessary. Add the sour cream, egg, vanilla, and lemon zest (if you choose), and mix again. Gradually beat in the flour. Divide the dough in half, wrap it, and chill for an hour to make it easier to handle.

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Roll out one portion of the dough at a time on a lightly floured surface to a thickness of 1/4 inch. Use flour-coated 2 1/2 to 4-inch cookie cutters to cut out shapes, rerolling the dough scraps as needed. Space the cookies 1 inch apart on the baking sheet.

Bake the cookies until the bottoms are lightly browned, about 7 to 8 minutes. Move them to a wire rack to cool. Optionally, you can drizzle or brush the cookies with powdered sugar icing.

For the icing:

Mix 1 cup powdered sugar, 1 tablespoon milk, and 1/4 teaspoon vanilla in a small bowl. Gradually stir in additional milk, one teaspoon at a time, until the icing reaches the desired consistency. You can also add food coloring to tint the icing. This recipe yields 1/2 cup.
